​This sharpener can be used for straight and serrated blades and has the ability of turning a 20 degree factory edge into a high-performing 15-degree Trizor edge. Stage one uses diamond abrasives on conical disks to develop very fine micro-grooves for an extra sharp bite. At the same time, it develops the first major bevel of the arch shaped edge. Stage two uses fine diamond abrasives to shape a second, smaller bevel and finer microgrooves. In stage three, a patented, flexible abrasive stropping disk system develops a microscopic, smooth and sharp edge. The last stage should be used to sharpen serrated knives because it sharpens and straightens each individual tooth. Built in spring guides automatically adjust to give you the right angle. The unit is compact and goes nicely with any kitchen décor. It comes with a three-year limited warranty.

One customer said the knives were “scary sharp.”  Another customer said the knife made confetti out of paper after being sharpened with the Chef’s Choice 15 Trizor XV EdgeSelect. One complaint was that although the sharpener did a great job sharpening, it left micro scratches on the knife. Overall, consumers were very satisfied with the performance of this sharpener.
